Lentil & Black Bean Soup
2 cups of dry lentils, washed
1 cup of dry black beans, washed
1-2 carrots, chopped
1/4 of an onion, chopped
5-6 slices of bacon, chopped
3 cloves of garlic
1 tsp cumin
1/4 tsp freshly ground pepper
1 tsp salt
5 chicken bouillon cubes
water: fill to the top of crock pot
Cook on high for 4-5 hours. I then turned it to low for the last 1-2 hours.
*I also think celery and diced tomatoes would have been a good addition, but we were out of those particular ingredients.
By the way, I LOVE soups. If you have a favorite soup recipe, I'd love it if you'd share it!

ReplyDeleteI've been thinking about a name for Baby #5 and think it should be Evangeline. You clearly have to use a vowel, so Olivia would work (then you'd have A, E, I, I and O) but Evangeline has such a lovely meaning. Think about it, I'm sure you'll see I'm right. =)
ReplyDeleteWe had a soup day for lunch yesterday. I took a box of beef broth added about a cup of water. probably somewhere between a cup and 2 cups of frozen mixed veggies, and cooked a small bag of alphabet noodles, drained, rinsed and added it to the above. Quick, easy, yummy and warm in their tummies on a cold winter day.

You crack me up! You know, at the beginning of this pregnancy, I was all about AVOIDING the names beginning with vowels. Ugh. It's not like we meant to start a trend, here- with the names of our children. Mark was all for choosing one on purpose with a vowel, but I stayed away from the AEIOU sections of the baby name books.
Funny, though... we've now decided on a girls' name- and it DOES happen to begin with a vowel. Our boys' name, however, does not. So we'll see...
Evangeline is very pretty, I agree. It doesn't happen to be the name we chose, though. :)
I made this soup yesterday. I didn't have lentils so I used split peas instead. It was really yummy, thanks.
