"Snacky lunch"

My kids have dubbed this kind of lunch a "snacky lunch", and it is their favorite kind of lunch, by far. Basically, what it means for me is that either we don't have any leftovers, I don't have any inspiration for figuring out what to fix, or we're running late and I need to get something on the table, and fast.

Hence, snacks. For lunch. Whatever can be dumped into a bowl with little or no prep from me.

On the table this day: trader joes' honey dijon pretzel pieces, cheese sticks, trader joes' snap pea crisps, strawberries, and homemade sweet potato chips.

Other things we've eaten for a "snacky lunch": fruit leather, string cheese, crackers, sliced cheese, sliced deli meat, peanut butter, apple slices, carrots, banana chunks, orange slices, pistachios, craisins, chips, olives, and that's all I can think of right now- though I know there's more.

  1. wow, I love the snacky lunch! At Aaron's parent's house we do this a lot - just a little bit of something nummy (as Aaron's Mum likes to say!). They call it having "smackerels" - like in Winnie the Pooh.

  3. We do this almost every Sunday night. It is an easy no cook meal for me. Cheese and crackers plus whatever veggies and fruits we have.

    My most recent fav snack is half a cored apple with peanut butter in the dip with a few chocolate chips sprinkled on top. YUM!

  4. Great idea! Lunch is so hard for us...everyone's hungry but everyone's busy.

    We do a lot of salad with chicken breasts, eggs, and cheese. And a lot of 'Cheese Qs' (flour tortillas with shredded cheese, all grilled and gooey...Yum-E!

    Yes. Lunch is my least-favorite meal of the day. I eat a lot of salad, too- but I just can't seem to get the rest of the fam as enthused about salad as I am. :) Oh, and we do cheese quesadillas frequently for lunch, too! Flour tortillas w/ cheese and sometimes black beans in there, too. Yum!

  8. This is what I do everyday...unless Halle cooks, its what we get :) Ha! I actually think its healthier than PJ &J or other things I could do...and really, how pretty is that tables?!
