Gone camping!

Tomorrow morning we're headed out for a camping trip with my family- my parents, little brothers (21 and 16), and my sister, her husband and their three children.

It should be a hoot! And at the moment I'm feeling good about things preparations-wise. Although I just RIGHT.THIS.SECOND realized that when I was at the grocery store today, I did not buy ingredients for S'MORES. ~!!!~ Just what on earth kind of mother am I? Oh, just wait until Mark hears this one. Thankfully, I'm sure grandma will have more than enough S'mores-fixings, or we can make a quick stop on the way out of town in the morning.

My mom is doing the dinners for all fourteen of us, and we're each responsible for our own family's breakfasts and lunches.

Here's what we'll be eating over the next few days:

*bagels and cream cheese
*bran muffins, fruit
*cereal (and I splurged and bought Lucky Charms and Peanut Butter Captain Crunch)

*Pasta salad (with bacon, tomatoes, green pepper, red onions, olives, cucumbers and parmesan cheese- all pre-chopped and in baggies or tupperware dishes. The pasta is already in a gallon-sized ziploc bag with the dressing.)
*Curried Chicken Salad Wraps (with the dressing, lettuce, red grapes, green onions, chicken and walnuts in a flour tortilla. Again, everything is pre-cut and ready to go.)
*Sandwiches (with deli meats and cheeses)
Also to go with lunches: Pringles and Fritos, chunks of watermelon, pineapple, or grapes.

for the kids: apple juice boxes, milk
for Mark: Mt. Dew
for me: Vanilla Coke.
Oh, yeah. And bottled water.

*2 9x13's of rice crispy treats (the absolute *best* dessert EVER!)
*Chocolate chip cookies. Best recipe ever-- remind me to give it to you sometime. So moist.
*Snack bin for the kids full of fruit snacks, little Handi-snacks cheese and crackers, and granola bars.
*Beef Jerky
*each of our favorite candy bars and gummy bears for the kids

I think we're set. Now I've got to go make those chocolate-chip cookies and the bran muffins while Mark loads up the van.

Have a wonderful week, all!

  1. *gasp*
    you forgot S'mores??!!

    have fun. :)

  2. Oh dear. You simply MUST have lots of s'more ingredients on hand!
Hope you all have a great time! Looking forward to some pictures when you return!

  3. Pringles and bagels with cream cheese always make our camping trips, too. I don't see peanut butter and jelly, though!!! Unheard of around here.

And I take complete offense to the notion that rice krispie treats are the best dessert ever... you can't utter those words about something with no chocolate!!!!

  4. Funtimes! Just up my ally. Man, I'd come for the food alone! Don't forget the sunscreen and hats. The Part in my hair is still peeling! Nasty!

  5. Well, the forgetting of the S'mores ingredients was definitely not a conscious thought on my part, but I will admit that I don't personally like them and never eat them, so that's probably a teeny part of the reason why they didn't make my list.

Mark was aappropriately shocked last night when I told him.

And I really need to finish up packing right now. RIGHT after I fix my post: I guess the way to spell it is "S'mores" and NOT "Smores" as I'd spelled it? Gotta fix that first!

  6. I'm sure it will be wonderful! We'll look forward to hearing about it.

  7. What fun! We love going camping, although we are spoiled and have a small camping trailer.

Have a terrific time with your family!

  8. Sounds like a yummy and fun-filled time!! have a great adventure :-)

  9. I made an equally horrid S'mores mistake on our first camping trip of the summer and forgot to pack the graham crackers. Only I didn't learn of my mistake until we were already there and 16 miles away from a grocery store.

Although, like you, I don't care much for S'mores in the first place. I usually eat one token S'mores per camping trip just because I feel like I have to. :)

We'll look forward to hearing about the trip!

  10. I still can't believe your mom will be making all the dinners! That is amazing. Even though I know you'll help a ton, the thought of going camping without having to put *all* the thought and effort into dinner sounds great!
Your lunches sound great! Make's me hungry for pasta salad and I don't think I have your curry salad recipe!
    Have a great time!

  11. Good catch on the "S'mores". I'm all about being gramatically correct. It's because it's a contraction for "Some More" - since you always want.... some more. :-) Well, not me. I do like s'mores but, like Jodi, usually only one. I also cannot eat plain marshmallows. blech.
