I keep forgetting to share some food links so I'm here for a quick post.

One of my favorite things to purchase at Trader Joe's is their Tandoori Naan bread (Indian Style flatbread).

Have you had this? It's scrumptious. But also a bit pricey.

I had wondered if I could find a recipe online but hadn't looked into it. Then one day Mark said, "You should really see if you could make this stuff, Stacy." But we talked about it and figured you probably had to use some fancy brick oven or something, so we didn't pursue it. Shortly after that conversation, I was at this blog and she linked to this recipe, so I tried it that very day, of course.


Delicious! And easy. And it made a TON! (If I remember correctly, about 16 of the size you see in the above picture).

Someone (Christy, I think) had asked for the Butternut Squash Lasagna recipe I made for Mark's birthday.

This is the recipe I used, but I wasn't perfectly happy with it. (Though I will say, most people really liked it, I'm a bit of a perfectionist so I'll be tweaking it until I am perfectly happy with it.)

Also, when I follow a recipe I never follow it to the letter, so here's what I did differently:
-I had already roasted and pureed my squash, so I didn't do it the way the recipe says.
-The white sauce I made, and then added in some cinnamon.
-I used regular lasagna noodles.

And finally, a recipe.

This is what's marinating for dinner tonight at our house:


This is one of our favorites, and I have no idea what it's called. We had something like this once at Mike and Amy's, years ago (do you guys remember this? At your old house? It was one of your 'Dream Dinners'?). And I remember we were sitting outside on the patio eating, and I was quizzing Mike, "What all do you think is in here?" So we came up with a vague list of ingredients, I went home and tried to duplicate it and this is what I eventually came up with:

3 cloves garlic
1/3 cup dried cranberries
8 small green olives
2 T capers (with juice)
2 T red wine vinegar
1 T oregano
1/4 cup olive oil
salt, pepper to taste

*3-4 boneless, skinless chicken breasts
1/4 cup brown sugar
1/4 cup white wine

Combine first group of ingredients, mix well. Spread mixture in bottom of 8x8 dish. Add chicken. Cover and refrigerate overnight.

Preheat oven to 350°.
Sprinkle brown sugar on top and pour white wine over chicken.

Bake for 1 hour, basting. Serve over white rice.

*Generally I use 6 chicken breasts in a 9x13 pan and double the sauce.

My kids, who don't like green olives, cranberries, or capers, *LOVE* this meal. Truly. As does everyone else I've ever served it to. Try it. And let me know what you think. (Or what it's called, if you have a similar recipe! ;))

  2. Okay...now I am really hungry. The Olive Caper Chicken (that's my name for it) looks and sounds so good. I literally got the twangy mouth when I read about it.
    Hey, I don't live too far from you....hint hint LOL!
    These are some great recipes to try. I have just started to like cooking in the last year....so I find posts like these helpful. I figured I'd be cooking the rest of my life...I better start liking it :o)

  4. Ooh ooh ooh! We LOVE naan at our house. And I just made it for the first time last week and it came out *so* good! The recipe I used had garlic-- you knead it into the dough. I baked the bread 3 at a time on my pizza stone. Mmm.

    And that chicken looks very interesting. I had something similar one time that someone in our church made; I think she called it Chicken Mirabella.

  6. Yep, Beka is right. It is called Chicken Mirabella. We ate way too much of it that summer and I was in the first trimester of pregnancy and very sick... so I can't think about it anymore without feeling a little ill (did you know that?).
    I am excited to eat your naan! I love that stuff!

  7. Tami has a DELICIOUS version of "Chicken Mirabella" (as aforementioned in the comments) that sounds really similar to this. I would NEVER have tried it unless she hadn't come over and batch cooked it with me (read: forced it on me) :) It's a favorite at her house, and now at mine too! I'll be trying your version as well!   10. Haha - beka beat me to it, but I recognized that chicken mirabella too (obviously since we go to the same church!)
    My husband passionately loves naan - and we only get it at our Pakistani friend's houses. I was soooo excited to see this recipe, and I'm going to make it for him. He is going to be so excited!! I can hardly wait to tell him about this.

  16. I have a pan of your chicken marinating right now to serve to our friends tomorrow, and another bag that will go into the freezer for another time.... I'm trusting you that it's really that good! I had all the ingredients on hand except for cranberries, so I substituted raisins. (But in the chicken mirabella recipes I saw online they used prunes, so I think raisins will be okay. By the way, your recipe is really close to some of the ones I saw!) I'll let you know how it goes over!

  17. It's me.....again! Everyone, well, almost everyone, loved the chicken! (The exception being Alethea, but neither of my kids are crazy about meat, so one out of two liking it was good enough for me!) It was super yummy, and very easy to make, and I plan on making up several bags of it to freeze before our baby is born. Thanks for the great recipe!

    Oh I'm so glad you liked it. (~Whew!~ It'd be pretty awful if people hated it!) It's a good combination of flavors, isn't it? We love it around here. When I made it the other night Ella said, "Mommy, this is my second favorite meal to meatloaf and mashed potatoes." :)

  19. It's called Chicken Mirabella! I too had it from dream dinners years ago and decided that I had to duplicate it some how. I've used plums, or prunes, and tonight I am doing it with cranberries!
